Ingredients:

  • 1 sheet (490g) puff pastry
  • 4 oz (113g) goat cheese
  • 1 cup (150g) caramelized onions
  • 1 tbsp (15ml) olive oil
  • 1 lb (450g) fresh figs
  • 1 tbsp (21g) honey
  • 1 tsp (1g) fresh thyme leaves
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Roll out the thawed puff pastry into a rectangle and lightly score a 1-inch border around the edge without cutting all the way through.
  2. Spread the room-temperature goat cheese evenly inside the scored border, then spoon the cooled caramelized onions over the cheese in a thin, even layer.
  3. Press fig wedges into the onion mixture, overlapping them slightly. Brush the exposed pastry edges with olive oil.
  4. Bake for 20–25 minutes until the pastry edges are puffed and golden brown and the figs are glossy.
  5. Immediately after removing from the oven, drizzle with honey and sprinkle with fresh thyme, sea salt, and black pepper.
