Ingredients:
- 1.5 cups (180g) graham cracker crumbs
- 6 tbsp (85g) unsalted butter, melted
- 2 tbsp (25g) granulated sugar
- 1 quart (946ml) premium peach ice cream, softened slightly
- 1 cup (240ml) heavy whipping cream, cold
- 0.5 cup (60g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 cup (140g) fresh peaches, finely diced
- 0.5 cup (120ml) peach preserves
- 2 tbsp (30ml) water
- 1 tsp (5g) powdered gelatin
Instructions:
- Combine graham cracker crumbs, melted butter, and sugar in a bowl until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan using the back of a spoon.
- Freeze the crust for 15 minutes to lock in the shape.
- In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Gently fold the softened peach ice cream into the whipped cream using a rubber spatula until the color is uniform.
- Fold in the diced peaches for added texture.
- Spread the mixture evenly over the frozen crust, smoothing the top with an offset spatula.
- Freeze for at least 4 hours, or until the cake is firm to the touch.
- Heat peach preserves and water in a small saucepan over medium heat until simmering.
- Stir in the gelatin and whisk until completely dissolved and the liquid is translucent.
- Allow the glaze to cool for 5-10 minutes.
- Pour the glaze over the frozen cake, tilting the pan to ensure the edges are fully covered.
