Ingredients:

  • 1/3 cup (80ml) honey
  • 1 cup (90g) quick oats
  • 1/2 cup (60g) vanilla protein powder
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) salt
  • 1/3 cup (60g) mini chocolate chips
  • 1/3 cup (60g) mini M&Ms
  • 2 tbsp (15g) chia seeds

Instructions:

  1. In a large mixing bowl, combine the peanut butter, honey, vanilla extract, and salt. Stir vigorously until the mixture is smooth and glossy.
  2. Fold in the quick oats and vanilla protein powder. Mix until a thick, heavy dough forms.
  3. Gently fold in the mini chocolate chips, M&Ms, and chia seeds, ensuring they are evenly distributed without over-mixing.
  4. Line an 8x8 inch baking pan with parchment paper. Transfer the dough to the pan and press down firmly with a spatula until the top is flat and compact.
  5. Chill the pan in the refrigerator for at least 30 minutes to set the structure before slicing into 12 bars.
