- 3/4 cup light brown sugar, packed
- 1 lb fresh figs, stems removed and halved lengthwise
- 1 tsp lemon juice
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup buttermilk
Instructions:
- Pour the melted butter and brown sugar directly into a 9-inch cast iron skillet and stir until combined.
- Place the halved figs cut-side down in the sugar mixture, arranging them in a tight concentric circle.
- Drizzle the lemon juice over the figs to balance the sweetness.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter and granulated sugar until pale and fluffy, approximately 3 minutes.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Alternately add the dry ingredients and the buttermilk to the butter mixture, mixing until just combined.
- Spread the batter evenly over the figs and bake for 50 minutes.
