Ingredients:

  • 6 tbsp unsalted butter, melted
  • 3/4 cup light brown sugar, packed
  • 1 lb fresh figs, stems removed and halved lengthwise
  • 1 tsp lemon juice
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup buttermilk

Instructions:

  1. Pour the melted butter and brown sugar directly into a 9-inch cast iron skillet and stir until combined.
  2. Place the halved figs cut-side down in the sugar mixture, arranging them in a tight concentric circle.
  3. Drizzle the lemon juice over the figs to balance the sweetness.
  4. In a medium bowl, whisk together the flour, baking powder, and salt.
  5. In a large bowl, beat the softened butter and granulated sugar until pale and fluffy, approximately 3 minutes.
  6. Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  7. Alternately add the dry ingredients and the buttermilk to the butter mixture, mixing until just combined.
  8. Spread the batter evenly over the figs and bake for 50 minutes.
