Ingredients:
- 6 cups (450g) whole grain cereal
- 1/2 cup (125g) creamy peanut butter
- 1/3 cup (110ml) honey
- 1 tsp (5ml) pure vanilla extract
- 1/4 tsp (1.5g) fine sea salt
Instructions:
- Combine the peanut butter, honey, and salt in your microwave safe glass bowl. Note: Using glass prevents hotspots that can burn the honey
- Microwave in 20 second bursts, stirring in between, until the mixture is smooth and glossy.
- Stir in the vanilla extract immediately after the last heat burst. Note: Adding vanilla at the end preserves its flavor
- Pour the 6 cups of cereal into your large mixing bowl.
- Drizzle the warm binder over the top of the cereal.
- Gently fold the cereal into the liquid using your silicone spatula until every piece is evenly coated.
- Line your 8x8 inch pan with parchment paper, leaving a bit of overhang on the sides.
- Transfer the mixture to the pan and press down firmly with a flat glass until the surface is level and tightly packed.
- Place the pan in the refrigerator for 60 minutes.
- Slice into 16 bars once the edges feel firm to the touch.
