Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) coconut sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 cup (140g) shredded zucchini, squeezed dry
- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (45g) quick-cooking rolled oats
- 1 tsp (5g) baking soda
- 1 1/2 tsp (4g) ground cinnamon
- 1/4 tsp (1g) salt
- 3/4 cup (130g) semi-sweet chocolate chips
Instructions:
- Grate the zucchini using the fine holes of a box grater. Place the shreds into a clean kitchen towel and twist tightly over the sink, squeezing until no more liquid escapes. Note: This is the most important step for texture.
- Beat the softened butter and coconut sugar in a large bowl until the mixture is creamy and pale.
- Add the egg and vanilla, mixing until fully incorporated.
- Stir the squeezed zucchini into the wet mixture until evenly distributed.
- Whisk together the flour, oats, baking soda, cinnamon, and salt in a separate bowl.
- Gradually blend the dry ingredients into the wet ingredients until a thick dough forms.
- Fold in the chocolate chips by hand using a spatula.
- Preheat the oven to 350°F (175°C) and scoop the dough onto prepared baking sheets.
- Bake 11 mins until the edges are set and lightly browned.
- Let them cool on the pan for 5 minutes before moving them to a wire rack.
