Ingredients:

  • 2 tbsp instant coffee or espresso powder
  • 2 tbsp granulated white sugar
  • 2 tbsp boiling water
  • 1/4 cup cold heavy whipping cream
  • 1 tbsp mascarpone cheese, room temperature
  • 1 tsp powdered sugar
  • 1/2 tsp pure vanilla extract
  • 1 cup whole milk
  • 1/2 tsp unsweetened cocoa powder

Instructions:

  1. In a small mixing bowl, combine instant coffee, granulated sugar, and boiling water.
  2. Using an electric hand mixer, whip the coffee mixture on high speed for 2 minutes until it forms a thick, mahogany-colored foam with stiff peaks.
  3. In a separate chilled bowl, combine heavy whipping cream, mascarpone cheese, powdered sugar, and vanilla extract. Whisk until the mixture reaches medium-stiff peaks.
  4. Pour 1 cup of cold milk into a tall glass.
  5. Gently spoon the mascarpone cream over the milk, then layer the whipped coffee foam on top.
  6. Using a fine-mesh sieve, dust the top with unsweetened cocoa powder and serve immediately.
