Ingredients:

  • 1 cup unsalted butter, slightly softened (2 sticks)
  • 2 tablespoons whole milk
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon honey

Instructions:

  1. Prepare the butter. Cut the 1 cup of unsalted butter into small cubes.
  2. Place cubes in a bowl and beat on medium speed for 2 minutes until the butter looks pale and smooth.
  3. Add the 1/4 teaspoon fine sea salt and 1 teaspoon honey.
  4. Pour in 1 tablespoon of the whole milk while the mixer is running.
  5. Turn the mixer to high and beat for 1 minute until you smell a sweet, milky aroma.
  6. Add the remaining 1 tablespoon of milk slowly.
  7. Whip on high for another 2 minutes until the volume has nearly doubled.
  8. Stop the mixer and lift the whisk; the butter should hold a soft peak.
  9. Use a spatula to ensure no dense butter remains at the bottom.
  10. Move the mixture to a crock or bowl immediately while it is at its most pliable.
