Ingredients:
- 1 cup unsalted butter, slightly softened (2 sticks)
- 2 tablespoons whole milk
- 1/4 teaspoon fine sea salt
- 1 teaspoon honey
Instructions:
- Prepare the butter. Cut the 1 cup of unsalted butter into small cubes.
- Place cubes in a bowl and beat on medium speed for 2 minutes until the butter looks pale and smooth.
- Add the 1/4 teaspoon fine sea salt and 1 teaspoon honey.
- Pour in 1 tablespoon of the whole milk while the mixer is running.
- Turn the mixer to high and beat for 1 minute until you smell a sweet, milky aroma.
- Add the remaining 1 tablespoon of milk slowly.
- Whip on high for another 2 minutes until the volume has nearly doubled.
- Stop the mixer and lift the whisk; the butter should hold a soft peak.
- Use a spatula to ensure no dense butter remains at the bottom.
- Move the mixture to a crock or bowl immediately while it is at its most pliable.
