Ingredients:
- 16 oz cream cheese, softened to room temperature
- 1 cup ranch dressing
- 3/4 cup buffalo-style hot sauce
- 1/2 tsp garlic powder
- 3 cups shredded rotisserie chicken
- 1.5 cups sharp cheddar cheese, freshly shredded
- 1 cup Monterey Jack cheese, freshly shredded
- 1/2 cup blue cheese crumbles
- 1/4 cup fresh chives, finely chopped
Instructions:
- In a large mixing bowl, beat the softened cream cheese until smooth and no lumps remain.
- Slowly incorporate the ranch dressing and hot sauce, whisking thoroughly to create a stable emulsion that prevents oil separation.
- Gently fold in the shredded chicken and half of the Cheddar and Monterey Jack cheeses until well coated.
- Transfer the mixture to a 9x9 inch ceramic baking dish and top with the remaining shredded cheese.
- Bake at 350°F (175°C) for 20-25 minutes until the edges are bubbling and the cheese on top has developed a golden crust.
- Garnish with blue cheese crumbles and finely chopped fresh chives. Alternatively, cook in a 3-quart slow cooker on low for 2-3 hours for party service.
