Ingredients:

  • 16 oz cream cheese, softened to room temperature
  • 1 cup ranch dressing
  • 3/4 cup buffalo-style hot sauce
  • 1/2 tsp garlic powder
  • 3 cups shredded rotisserie chicken
  • 1.5 cups sharp cheddar cheese, freshly shredded
  • 1 cup Monterey Jack cheese, freshly shredded
  • 1/2 cup blue cheese crumbles
  • 1/4 cup fresh chives, finely chopped

Instructions:

  1. In a large mixing bowl, beat the softened cream cheese until smooth and no lumps remain.
  2. Slowly incorporate the ranch dressing and hot sauce, whisking thoroughly to create a stable emulsion that prevents oil separation.
  3. Gently fold in the shredded chicken and half of the Cheddar and Monterey Jack cheeses until well coated.
  4. Transfer the mixture to a 9x9 inch ceramic baking dish and top with the remaining shredded cheese.
  5. Bake at 350°F (175°C) for 20-25 minutes until the edges are bubbling and the cheese on top has developed a golden crust.
  6. Garnish with blue cheese crumbles and finely chopped fresh chives. Alternatively, cook in a 3-quart slow cooker on low for 2-3 hours for party service.
