Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) light brown sugar, packed
  • 2 cups (300g) fresh peaches, sliced 1/4 inch thick
  • 1 tsp (5ml) vanilla extract
  • 1 box (15.25 oz / 432g) yellow cake mix
  • 3 large eggs
  • 1/2 cup (120ml) whole milk
  • 1/2 cup (115g) unsalted butter, softened
  • 1 tsp (5ml) ground cinnamon

Instructions:

  1. Pour the melted butter directly into a 9-inch round cake pan, swirling to coat the bottom completely.
  2. Sprinkle the brown sugar evenly over the butter, pressing it down slightly into a flat layer.
  3. Arrange peach slices in a concentric circle on top of the sugar and stir vanilla extract around the edges of the peaches.
  4. In a large mixing bowl, whisk together the yellow cake mix, eggs, milk, softened butter, and cinnamon.
  5. Beat on medium speed for about 2 minutes until the batter is smooth.
  6. Pour the batter evenly over the peach layer and smooth the top with a rubber spatula.
  7. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool slightly in the pan before flipping it onto a wire cooling rack.
