Ingredients:

  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 1 can (16 oz) refried beans
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 tsp garlic powder
  • 3 ripe avocados, pitted and peeled
  • 1 tbsp fresh lime juice
  • 1/4 tsp salt
  • 2 tbsp chopped fresh cilantro
  • 2 cups shredded sharp cheddar cheese
  • 1 cup diced Roma tomatoes
  • 1/2 cup sliced black olives
  • 2 tbsp sliced green onions

Instructions:

  1. Brown the ground beef in a skillet over medium-high heat until no pink remains. Drain excess fat.
  2. Stir in the taco seasoning and water, simmering for 3-5 minutes until the liquid reduces into a thick glaze. Set aside to cool slightly.
  3. In a medium mixing bowl, mash the avocados with lime juice, salt, and cilantro until it reaches a chunky-smooth consistency.
  4. In a second mixing bowl, beat the softened cream cheese, sour cream, and garlic powder together until velvety and unified.
  5. Spread the refried beans evenly across the bottom of a 9x9 inch glass baking dish to create the anchor layer.
  6. Layer the seasoned ground beef evenly over the refried beans.
  7. Spread the cream cheese and sour cream mixture over the beef layer.
  8. Carefully spread the mashed avocado mixture over the cream layer.
  9. Top the dip with shredded cheddar cheese, diced Roma tomatoes, sliced black olives, and sliced green onions.
  10. Chill in the refrigerator for 30 minutes before serving to allow flavors to meld and the structure to stabilize.
