Ingredients:

  • 1 cup steel cut oats
  • 3 cups filtered water
  • 0.25 tsp fine sea salt
  • 0.5 cup Greek yogurt
  • 2 tbsp chia seeds
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla bean paste

Instructions:

  1. In a heavy-bottomed saucepan, bring 3 cups of water and salt to a rolling boil. Stir in the steel cut oats and boil vigorously for exactly 1 minute.
  2. Remove the pan from the heat and cover tightly with a lid. Let the oats sit undisturbed at room temperature for 20 minutes to initiate starch gelatinization.
  3. Stir in the chia seeds, maple syrup, vanilla bean paste, and Greek yogurt until well combined. Divide the mixture into four 16 oz Mason jars, seal, and refrigerate for at least 7 hours.
