Ingredients:
- 1 tbsp (12g) coconut sugar
- 1/2 tsp (1g) ground Ceylon cinnamon
- 1 lime wedge
- 4 oz (120ml) fresh unfiltered apple cider
- 1/2 oz (15ml) freshly squeezed lime juice
- 4 oz (120ml) spicy ginger beer
- 1 sprig fresh rosemary
Instructions:
- Combine the coconut sugar and ground cinnamon on a small shallow plate. Run a lime wedge around the rim of a highball glass or copper mug, then dip the rim into the sugar mixture to coat thoroughly.
- In a cocktail shaker filled with ice, combine the unfiltered apple cider, fresh lime juice. Shake vigorously for 10 seconds to chill and aerate.
- Strain the mixture into the prepared glass over fresh ice. Top slowly with the spicy ginger beer to maintain carbonation.
- Stir once very gently with a cinnamon stick. Garnish with apple rounds and a sprig of rosemary to enhance the aromatic profile.
