Ingredients:

  • 1 tbsp (12g) coconut sugar
  • 1/2 tsp (1g) ground Ceylon cinnamon
  • 1 lime wedge
  • 4 oz (120ml) fresh unfiltered apple cider
  • 1/2 oz (15ml) freshly squeezed lime juice
  • 4 oz (120ml) spicy ginger beer
  • 1 sprig fresh rosemary

Instructions:

  1. Combine the coconut sugar and ground cinnamon on a small shallow plate. Run a lime wedge around the rim of a highball glass or copper mug, then dip the rim into the sugar mixture to coat thoroughly.
  2. In a cocktail shaker filled with ice, combine the unfiltered apple cider, fresh lime juice. Shake vigorously for 10 seconds to chill and aerate.
  3. Strain the mixture into the prepared glass over fresh ice. Top slowly with the spicy ginger beer to maintain carbonation.
  4. Stir once very gently with a cinnamon stick. Garnish with apple rounds and a sprig of rosemary to enhance the aromatic profile.
