Ingredients:
- 6 cups (900g) fresh peaches, peeled and sliced
- ½ cup (100g) granulated sugar
- 1 tbsp (8g) cornstarch
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) fresh lemon juice
- ¼ tsp (1.5g) salt
- 1 cup (125g) all-purpose flour
- ½ cup (100g) granulated sugar
- 1 tbsp (12g) baking powder
- ¼ tsp (1.5g) salt
- ¾ cup (180ml) whole milk
- 6 tbsp (85g) unsalted butter, melted
Instructions:
- In a large bowl, combine the sliced peaches, sugar, cornstarch, cinnamon, lemon juice, and salt.
- Let the peach mixture sit for 5–10 minutes to allow the sugar to create a syrup.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt until no lumps remain.
- Stir in the milk until the batter is just combined; do not overmix.
- Pour the melted butter directly into the bottom of a 9x9 inch baking dish or cast-iron skillet, tilting the pan to coat the surface.
- Pour the batter directly over the melted butter without stirring.
- Carefully spoon the peach mixture over the top of the batter.
- Bake in a preheated oven at 375°F (190°C) for 40–45 minutes until the crust is golden brown.
