Ingredients:

  • 6 cups (900g) fresh peaches, peeled and sliced
  • ½ cup (100g) granulated sugar
  • 1 tbsp (8g) cornstarch
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) fresh lemon juice
  • ¼ tsp (1.5g) salt
  • 1 cup (125g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 tbsp (12g) baking powder
  • ¼ tsp (1.5g) salt
  • ¾ cup (180ml) whole milk
  • 6 tbsp (85g) unsalted butter, melted

Instructions:

  1. In a large bowl, combine the sliced peaches, sugar, cornstarch, cinnamon, lemon juice, and salt.
  2. Let the peach mixture sit for 5–10 minutes to allow the sugar to create a syrup.
  3. In a medium bowl, whisk together the flour, sugar, baking powder, and salt until no lumps remain.
  4. Stir in the milk until the batter is just combined; do not overmix.
  5. Pour the melted butter directly into the bottom of a 9x9 inch baking dish or cast-iron skillet, tilting the pan to coat the surface.
  6. Pour the batter directly over the melted butter without stirring.
  7. Carefully spoon the peach mixture over the top of the batter.
  8. Bake in a preheated oven at 375°F (190°C) for 40–45 minutes until the crust is golden brown.
