Ingredients:

  • 115g unsalted butter
  • 125g all-purpose flour
  • 200g granulated sugar
  • 25g unsweetened cocoa powder
  • 10g baking powder
  • 2g fine sea salt
  • 180ml whole milk
  • 5ml pure vanilla extract
  • 150g light brown sugar
  • 35g unsweetened cocoa powder
  • 350ml boiling water

Instructions:

  1. Preheat your oven to 350°F (180°C). Place the 115g of butter in a 9 inch baking dish and melt in the oven for 3-5 minutes until bubbling.
  2. In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, 25g of cocoa powder, baking powder, and salt.
  3. Stir the whole milk and vanilla extract into the flour mixture until just combined to form the batter.
  4. Remove the baking dish from the oven and pour the batter directly over the melted butter. Do not stir the mixture.
  5. In a small bowl, combine the light brown sugar and the remaining 35g of cocoa powder. Sprinkle this mixture evenly over the top of the batter.
  6. Carefully pour the 350ml of boiling water over the entire surface. Do not stir; the layers will transform during the baking process.
  7. Bake for 35 minutes until the top is set and has formed a shattering crust, while the bottom remains molten.
