Ingredients:
- 115g unsalted butter
- 125g all-purpose flour
- 200g granulated sugar
- 25g unsweetened cocoa powder
- 10g baking powder
- 2g fine sea salt
- 180ml whole milk
- 5ml pure vanilla extract
- 150g light brown sugar
- 35g unsweetened cocoa powder
- 350ml boiling water
Instructions:
- Preheat your oven to 350°F (180°C). Place the 115g of butter in a 9 inch baking dish and melt in the oven for 3-5 minutes until bubbling.
- In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, 25g of cocoa powder, baking powder, and salt.
- Stir the whole milk and vanilla extract into the flour mixture until just combined to form the batter.
- Remove the baking dish from the oven and pour the batter directly over the melted butter. Do not stir the mixture.
- In a small bowl, combine the light brown sugar and the remaining 35g of cocoa powder. Sprinkle this mixture evenly over the top of the batter.
- Carefully pour the 350ml of boiling water over the entire surface. Do not stir; the layers will transform during the baking process.
- Bake for 35 minutes until the top is set and has formed a shattering crust, while the bottom remains molten.
