Ingredients:

  • 12 fresh figs (approx. 1 lb / 450g), stems trimmed and halved lengthwise
  • 1 tbsp unsalted butter, melted
  • 3 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/4 cup walnuts, roughly chopped
  • 1/2 tsp ground cinnamon
  • Fresh mint leaves for garnish

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper to prevent the honey glaze from bonding to the metal.
  2. Slice the figs in half lengthwise and place them cut-side up on the prepared baking sheet.
  3. In a small bowl, whisk together the melted butter, honey, balsamic vinegar, vanilla, and salt until emulsified.
  4. Using a brush or spoon, generously coat the cut side of each fig with the glaze, then sprinkle the ground cinnamon evenly across the tops.
  5. Slide the tray into the center rack and roast for 12–15 minutes until the edges turn a deep mahogany-colored brown and the center looks slightly slumped and jammy.
  6. During the last 3 minutes of roasting, scatter the chopped walnuts onto the tray around the figs to toast them in the escaping honey juices.
  7. Remove from the oven and garnish with fresh mint leaves.
