Ingredients:

  • 1 lb ground beef (80/20 fat ratio)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • 1 tsp Kosher salt
  • 0.5 tsp black pepper
  • 1 tsp dried Italian seasoning
  • 0.5 cup Panko bread crumbs
  • 0.25 cup whole milk

Instructions:

  1. In a small bowl, whisk 1 large egg, 0.25 cup whole milk, 1 tsp Worcestershire sauce, and 0.5 cup Panko bread crumbs. Note: This allows the breadcrumbs to hydrate before hitting the meat.
  2. Stir in 2 cloves minced garlic, 1 tsp Kosher salt, 0.5 tsp black pepper, and 1 tsp dried Italian seasoning to the milk mixture.
  3. Place 1 lb ground beef in a large bowl and pour the liquid mixture over it.
  4. Using a fork or very light fingers, toss the ingredients together until just combined. Note: Over mixing makes the meat tough.
  5. Scoop about 2 tablespoons of meat and roll gently between your palms into a 1.5 inch ball.
  6. Place meatballs on a parchment lined tray, leaving at least 1 inch of space between each.
  7. Bake at 400°F for 20 minutes until the tops are sizzling and golden.
  8. Remove from the oven and let them sit on the tray for 5 minutes. Note: This allows the juices to redistribute inside the meat.
