Ingredients:

  • 1 cup Whole milk
  • 1/2 cup Double strength coffee, chilled
  • 2 tbsp Granulated sugar
  • 1/4 tsp Xanthan gum
  • 2 cups Ice cubes
  • 1/2 cup Granulated sugar for the sauce
  • 2 tbsp Salted butter
  • 1/4 cup Heavy cream
  • 1/4 cup Granulated sugar for the topping
  • 1 pinch Sea salt

Instructions:

  1. Melt 1/4 cup sugar in a small pan over medium heat. Note: Do not stir, just swirl the pan.
  2. Pour the golden liquid onto parchment paper. Wait until it is hard and glass like.
  3. Shatter the cooled sugar into tiny bits. Add a pinch of sea salt and set aside for the final garnish.
  4. Heat 1/2 cup sugar in the same pan until it turns a deep amber color. Look for the wisp of smoke.
  5. Whisk in 2 tbsp salted butter carefully. Note: The mixture will bubble and hiss aggressively.
  6. Stir in 1/4 cup heavy cream slowly. Whisk until the sauce is velvety and smooth.
  7. Combine 1 cup milk, 1/2 cup coffee, and 2 tbsp sugar in the blender.
  8. Add 1/4 tsp xanthan gum and 2 cups ice. Pulse 10 times then blend high for 20 seconds.
  9. Drizzle the dark caramel sauce inside the walls of a tall glass.
  10. Pour the mixture in, top with whipped cream, and finish with the salty sugar shatter.
