Ingredients:

  • 1/2 cup fresh raspberries
  • 1 tbsp raw honey
  • 1 tbsp freshly squeezed lime juice
  • 1 cup chilled sparkling mineral water
  • 1/2 cup ice cubes
  • 1 sprig fresh mint
  • 1 thin lime round
  • 1 tsp coarse sanding sugar

Instructions:

  1. Place 1/2 cup fresh raspberries into a sturdy glass.
  2. Add 1 tbsp raw honey and 1 tbsp lime juice over the berries.
  3. Muddle the mixture for exactly 45 seconds until the berries are completely pulverized and a thick syrup forms.
  4. If your child dislikes seeds, press this mixture through a fine mesh strainer into a clean glass.
  5. Moisten the rim of your serving glass with a lime wedge and dip it into 1 tsp coarse sanding sugar until a thick glittering crust forms.
  6. Fill the glass with 1/2 cup ice cubes until they reach the three quarter mark.
  7. Pour the raspberry base over the ice.
  8. Slowly top with 1 cup chilled sparkling mineral water until the foam reaches the rim.
  9. Gently stir with a long spoon just once to swirl the syrup upward.
  10. Garnish with a sprig of mint and a lime round. Smell the mint as you tuck it in to ensure it's fragrant.
