Ingredients:
- 1/2 cup fresh raspberries
- 1 tbsp raw honey
- 1 tbsp freshly squeezed lime juice
- 1 cup chilled sparkling mineral water
- 1/2 cup ice cubes
- 1 sprig fresh mint
- 1 thin lime round
- 1 tsp coarse sanding sugar
Instructions:
- Place 1/2 cup fresh raspberries into a sturdy glass.
- Add 1 tbsp raw honey and 1 tbsp lime juice over the berries.
- Muddle the mixture for exactly 45 seconds until the berries are completely pulverized and a thick syrup forms.
- If your child dislikes seeds, press this mixture through a fine mesh strainer into a clean glass.
- Moisten the rim of your serving glass with a lime wedge and dip it into 1 tsp coarse sanding sugar until a thick glittering crust forms.
- Fill the glass with 1/2 cup ice cubes until they reach the three quarter mark.
- Pour the raspberry base over the ice.
- Slowly top with 1 cup chilled sparkling mineral water until the foam reaches the rim.
- Gently stir with a long spoon just once to swirl the syrup upward.
- Garnish with a sprig of mint and a lime round. Smell the mint as you tuck it in to ensure it's fragrant.
