Ingredients:

  • 1 lb strawberries, hulled
  • 2 cups cantaloupe, cubed
  • 2 cups fresh pineapple, cubed
  • 4 kiwis, peeled and sliced into rounds
  • 1 cup blueberries
  • 1 cup purple grapes
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 cup plain Greek yogurt
  • 2 tbsp honey
  • 1/2 tsp vanilla extract

Instructions:

  1. Cut the cantaloupe and pineapple into uniform 1-inch cubes and slice the kiwis into thick rounds to ensure the skewers remain balanced.
  2. In a large bowl, whisk together the lime juice and 1 tablespoon of honey, then gently toss the cubed fruit (excluding berries) in the mixture to prevent browning.
  3. Slide the fruit onto bamboo skewers in a strict color order: strawberry, cantaloupe, pineapple, kiwi, blueberry, and grape.
  4. In a small bowl, whisk together the plain Greek yogurt, 2 tablespoons of honey, and vanilla extract until smooth.
