Ingredients:

  • 3 large (150g) overripe bananas, mashed
  • 1/2 cup (120g) plain Greek yogurt
  • 2 large (100g) eggs
  • 1/4 cup (60ml) maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 cup (90g) oat flour
  • 2 scoops (60g) vanilla whey or casein protein powder
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) cinnamon
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (60g) chopped walnuts
  • 1/3 cup (50g) dark chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and line an 8 x 4-inch loaf pan with parchment paper.
  2. In a large mixing bowl, mash the bananas until no large chunks remain.
  3. Whisk in the Greek yogurt, eggs, maple syrup, and vanilla until the mixture is smooth and emulsified.
  4. Sift in the oat flour, protein powder, baking soda, cinnamon, and salt.
  5. Using a spatula, gently fold the dry ingredients into the wet until no streaks of flour remain; do not overmix.
  6. Fold in the chopped walnuts and dark chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 50–60 minutes, or until the top is deep golden-brown and a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
