Ingredients:

  • 2 slices thick-cut sourdough bread
  • 1.5 tbsp salted butter, softened
  • 1/4 tsp garlic powder
  • 1/2 tsp dried Italian seasoning
  • 1/2 cup low-moisture mozzarella cheese, shredded
  • 10 slices thin-cut pepperoni
  • 2 tbsp pizza sauce
  • 1 tbsp freshly grated Parmesan cheese

Instructions:

  1. In a small bowl, cream together the softened salted butter, garlic powder, and Italian seasoning. Spread the mixture evenly on one side of each bread slice.
  2. Place one slice of bread butter-side down in a cold non-stick skillet. Spread 2 tablespoons of pizza sauce on the dry side of the bread.
  3. Layer half of the shredded mozzarella, all of the pepperoni slices, and the remaining mozzarella. Sprinkle with grated Parmesan. Top with the second slice of bread, butter-side facing up.
  4. Turn the heat to medium-low. Cook for 4 minutes on the first side. You should smell toasted garlic and warm herbs.
  5. Sprinkle 1/2 tbsp of the Parmesan cheese onto the top buttered slice. Carefully flip the sandwich. Cook for another 4 minutes. Sprinkle the remaining Parmesan on the now top side, flip for 30 seconds to crisp it, then flip back.
