Ingredients:
- 2 slices thick-cut sourdough bread
- 1.5 tbsp salted butter, softened
- 1/4 tsp garlic powder
- 1/2 tsp dried Italian seasoning
- 1/2 cup low-moisture mozzarella cheese, shredded
- 10 slices thin-cut pepperoni
- 2 tbsp pizza sauce
- 1 tbsp freshly grated Parmesan cheese
Instructions:
- In a small bowl, cream together the softened salted butter, garlic powder, and Italian seasoning. Spread the mixture evenly on one side of each bread slice.
- Place one slice of bread butter-side down in a cold non-stick skillet. Spread 2 tablespoons of pizza sauce on the dry side of the bread.
- Layer half of the shredded mozzarella, all of the pepperoni slices, and the remaining mozzarella. Sprinkle with grated Parmesan. Top with the second slice of bread, butter-side facing up.
- Turn the heat to medium-low. Cook for 4 minutes on the first side. You should smell toasted garlic and warm herbs.
- Sprinkle 1/2 tbsp of the Parmesan cheese onto the top buttered slice. Carefully flip the sandwich. Cook for another 4 minutes. Sprinkle the remaining Parmesan on the now top side, flip for 30 seconds to crisp it, then flip back.
