Ingredients:

  • 2 oz chilled Limoncello
  • 2 oz cold-pressed pineapple juice, unsweetened
  • 0.5 oz freshly squeezed lemon juice
  • 3 oz Prosecco Superiore, Brut

Instructions:

  1. Fill a large wine glass or stemless spritz glass to the brim with large ice cubes. Stir the ice for 10 seconds to chill the glass, then strain out any accumulated melted water.
  2. Pour 2 oz of chilled limoncello, 2 oz of pineapple juice, and 0.5 oz of fresh lemon juice over the ice. Stir gently with a bar spoon to combine the citrus and sugars.
  3. Tilt the glass slightly and slowly pour 3 oz of chilled Prosecco down the side to preserve carbonation.
  4. Garnish with a fresh pineapple wedge and a sprig of mint that has been slapped to release its aromatic oils.
