Ingredients:
- 1 large whole Lime, cut into 8 pieces
- 2 teaspoons Superfine Sugar (Caster Sugar)
- 2 fluid ounces Cachaça (good quality, unaged)
- Ice (cubed or crushed)
Instructions:
- Prepare the Lime: Wash the lime thoroughly. Slice off the small, hard ends (pith) and discard. Quarter the lime lengthwise, then cut each quarter in half to yield 8 smaller pieces/chunks.
- Add Citrus and Sugar: Place the 8 lime pieces and the 2 teaspoons of superfine sugar directly into the bottom of a sturdy rocks glass.
- The Critical Muddle: Using a cocktail muddler, press the limes firmly but gently into the sugar. Do not crush the peel. The goal is to release juice and fragrant oils. Muddle for about 30 seconds, turning the pieces as you go. Stop immediately once the oils are fragrant.
- Add the Cachaça: Pour the measured 2 fluid ounces of Cachaça over the muddled lime and sugar mixture.
- Stir to Dissolve: Use a spoon to vigorously stir the mixture for 15-20 seconds. This step is essential to ensure the sugar fully dissolves into the liquids.
- Add Ice: Fill the glass completely with ice (cubed is standard, but crushed provides a quicker chill and better texture).
- Final Stir and Serve: Give the entire drink a final, quick stir to incorporate the chilled ice into the mixture. Garnish with a thin slice or wedge of fresh lime. Serve the Classic Caipirinha immediately.
