Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 3 large (150g) eggs, room temperature
  • 0.5 cup (115g) unsalted butter, melted and cooled
  • 1 tsp (5g) baking powder
  • 0.5 tsp (3g) salt
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) fresh peaches, peeled and sliced
  • 1 tbsp (8g) granulated sugar
  • 0.5 tsp (1g) ground cinnamon
  • 1 tbsp (8g) all-purpose flour

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9 or 10-inch round cake pan with butter and line the bottom with parchment paper. In a small bowl, toss the sliced peaches with 1 tbsp flour, cinnamon, and 1 tbsp sugar until evenly coated.
  2. Beat the eggs and 1 cup of granulated sugar on high speed for approximately 5 minutes until the mixture is pale, thick, and has nearly doubled in volume.
  3. Slowly stream in the melted butter and vanilla extract while continuing to mix on low speed.
  4. Sift the flour, baking powder, and salt directly over the egg mixture. Using a spatula, gently fold the flour in using a figure-eight motion until no white streaks remain, taking care not to over-mix.
  5. Pour the batter into the prepared pan and gently press the coated peach slices into the top of the batter.
  6. Bake for 35–40 minutes, or until the edges pull away slightly from the pan and the center is set.
