Ingredients:

  • 2.5 lbs fresh peaches, peeled and sliced
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1/2 cup water
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted

Instructions:

  1. In a large mixing bowl, combine the sliced fresh peaches, sugar, cornstarch, cinnamon, and water. Stir gently with a spatula until the peaches are evenly coated and the cornstarch has dissolved into the water.
  2. Pour the peach mixture directly into a prepared 9x9 inch or 9x13 inch baking dish, spreading the fruit into an even layer.
  3. Sprinkle the dry yellow cake mix evenly over the top of the fruit. Use your hand or a spoon to ensure the powder covers the peaches entirely, without stirring it into the fruit.
  4. Drizzle the melted butter evenly across the top of the cake mix, or drop small dollops of butter across the surface.
  5. Place in a preheated oven at 350°F (175°C) and bake for 30 minutes, or until the topping is firm to the touch and the fruit juices are bubbling up around the edges.
