Ingredients:
- 2.5 lbs fresh peaches, peeled and sliced
- 3/4 cup granulated sugar
- 2 tbsp cornstarch
- 1 tsp ground cinnamon
- 1/2 cup water
- 1 box (15.25 oz) yellow cake mix
- 1/2 cup unsalted butter, melted
Instructions:
- In a large mixing bowl, combine the sliced fresh peaches, sugar, cornstarch, cinnamon, and water. Stir gently with a spatula until the peaches are evenly coated and the cornstarch has dissolved into the water.
- Pour the peach mixture directly into a prepared 9x9 inch or 9x13 inch baking dish, spreading the fruit into an even layer.
- Sprinkle the dry yellow cake mix evenly over the top of the fruit. Use your hand or a spoon to ensure the powder covers the peaches entirely, without stirring it into the fruit.
- Drizzle the melted butter evenly across the top of the cake mix, or drop small dollops of butter across the surface.
- Place in a preheated oven at 350°F (175°C) and bake for 30 minutes, or until the topping is firm to the touch and the fruit juices are bubbling up around the edges.
