Ingredients:
- 1 cup (225g) unsalted butter, browned and slightly cooled
- 1 ½ cups (300g) granulated sugar
- 3 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 3 cups (375g) all-purpose flour
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- 1 cup (240g) sour cream
- 2 cups (300g) fresh peaches, peeled and diced
- ½ tsp (1g) ground cinnamon
- 4 tbsp (55g) unsalted butter, browned
- 2 cups (240g) powdered sugar
- 2 tbsp (30ml) heavy cream
- ½ tsp (2.5ml) vanilla extract
Instructions:
- Melt the butter in a skillet over medium heat, whisking constantly until golden-brown bits form and it smells nutty. Remove from heat immediately and let cool for 10 minutes.
- Cream the browned butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon.
- Alternate adding the dry flour mixture and the sour cream to the butter mixture, beginning and ending with the flour.
- Toss the diced peaches in a tablespoon of the flour mixture, then gently fold the peaches into the batter using a spatula.
- Pour the batter into a greased Bundt pan and bake at 350°F (175°C) for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the icing by whisking browned butter into powdered sugar. Gradually add heavy cream and vanilla, stirring until the icing is thick but pourable.
- Drizzle the icing over the cooled cake before serving.
