Ingredients:

  • 1 lb Lean Ground Beef (90% lean)
  • 1 lb Ground Turkey or Lean Pork
  • 4 cloves Garlic, grated via microplane
  • 0.5 cup Fresh Italian Parsley, finely minced
  • 1 tbsp Fresh Rosemary, minced
  • 1 tsp Dried Oregano
  • 0.75 cup Panko breadcrumbs
  • 0.33 cup Low-sodium beef broth
  • 1 Large Egg, beaten
  • 0.5 cup Grated Parmesan cheese
  • 1 tsp Sea salt
  • 0.5 tsp Cracked black pepper

Instructions:

  1. In a large mixing bowl, combine the Panko breadcrumbs, beef broth, grated garlic, minced parsley, rosemary, and oregano. Let the mixture sit for 5 minutes to hydrate the breadcrumbs and release aromatic oils.
  2. Add the beaten egg, grated Parmesan cheese, ground beef, and ground turkey to the bowl.
  3. Using cold hands, gently fold the ingredients together until just combined. Avoid over-mixing to ensure the meatballs remain light and airy.
  4. Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper or a silicone mat.
  5. Using a small cookie scoop, portion the mixture into 1.5-inch rounds and place them on the prepared baking sheet.
  6. Roast in the center of the oven for 18 minutes until the exterior has a mahogany-colored crust and the internal temperature reaches 165°F (74°C).
