Ingredients:
- 1 lb Lean Ground Beef (90% lean)
- 1 lb Ground Turkey or Lean Pork
- 4 cloves Garlic, grated via microplane
- 0.5 cup Fresh Italian Parsley, finely minced
- 1 tbsp Fresh Rosemary, minced
- 1 tsp Dried Oregano
- 0.75 cup Panko breadcrumbs
- 0.33 cup Low-sodium beef broth
- 1 Large Egg, beaten
- 0.5 cup Grated Parmesan cheese
- 1 tsp Sea salt
- 0.5 tsp Cracked black pepper
Instructions:
- In a large mixing bowl, combine the Panko breadcrumbs, beef broth, grated garlic, minced parsley, rosemary, and oregano. Let the mixture sit for 5 minutes to hydrate the breadcrumbs and release aromatic oils.
- Add the beaten egg, grated Parmesan cheese, ground beef, and ground turkey to the bowl.
- Using cold hands, gently fold the ingredients together until just combined. Avoid over-mixing to ensure the meatballs remain light and airy.
- Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper or a silicone mat.
- Using a small cookie scoop, portion the mixture into 1.5-inch rounds and place them on the prepared baking sheet.
- Roast in the center of the oven for 18 minutes until the exterior has a mahogany-colored crust and the internal temperature reaches 165°F (74°C).
