Ingredients:

  • 1.5 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.5 cup neutral oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 0.5 cup buttermilk
  • 2 cups fresh peaches, peeled and diced
  • 1 tbsp granulated sugar
  • 0.25 tsp ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square pan with butter or oil and line the bottom with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until no lumps remain.
  3. Create a well in the center of the dry ingredients and pour in the oil, egg, vanilla, and buttermilk. Whisk until just combined; stop as soon as flour streaks disappear.
  4. In a separate small bowl, toss the diced peaches with 1 tablespoon of the measured flour from the recipe.
  5. Gently fold the floured peaches into the batter using a spatula, being careful not to overmix.
  6. Pour the batter into the prepared pan and smooth the top. Sprinkle the additional cinnamon and sugar mixture evenly over the surface.
  7. Bake for 35-40 minutes until the edges pull away slightly from the pan and a toothpick inserted into the center comes out with a few moist crumbs.
