Ingredients:
- 1.5 cups all-purpose flour
- 0.75 cup granulated sugar
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.25 tsp salt
- 0.5 tsp ground cinnamon
- 0.5 cup neutral oil
- 1 large egg
- 1 tsp vanilla extract
- 0.5 cup buttermilk
- 2 cups fresh peaches, peeled and diced
- 1 tbsp granulated sugar
- 0.25 tsp ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch square pan with butter or oil and line the bottom with parchment paper.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until no lumps remain.
- Create a well in the center of the dry ingredients and pour in the oil, egg, vanilla, and buttermilk. Whisk until just combined; stop as soon as flour streaks disappear.
- In a separate small bowl, toss the diced peaches with 1 tablespoon of the measured flour from the recipe.
- Gently fold the floured peaches into the batter using a spatula, being careful not to overmix.
- Pour the batter into the prepared pan and smooth the top. Sprinkle the additional cinnamon and sugar mixture evenly over the surface.
- Bake for 35-40 minutes until the edges pull away slightly from the pan and a toothpick inserted into the center comes out with a few moist crumbs.
