Ingredients:

  • 3/4 cup extra virgin olive oil
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup whole milk
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 10 fresh figs
  • 2 tbsp honey
  • 1/4 tsp cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the olive oil and sugar for 2-3 minutes until the mixture is pale and aerated. Add eggs one by one, whisking thoroughly after each.
  3. Sift flour, baking powder, and salt into the bowl. Gently fold in the milk, vanilla extract, and lemon zest using a spatula until just combined.
  4. Pour the batter into the prepared pan and smooth the top. Press fresh fig slices firmly into the batter in a circular pattern.
  5. Drizzle honey over the figs and sprinkle with cinnamon.
  6. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
