Ingredients:
- 3/4 cup extra virgin olive oil
- 1 cup granulated sugar
- 3 large eggs
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup whole milk
- 1 tsp vanilla extract
- 1 tbsp lemon zest
- 10 fresh figs
- 2 tbsp honey
- 1/4 tsp cinnamon
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large bowl, whisk together the olive oil and sugar for 2-3 minutes until the mixture is pale and aerated. Add eggs one by one, whisking thoroughly after each.
- Sift flour, baking powder, and salt into the bowl. Gently fold in the milk, vanilla extract, and lemon zest using a spatula until just combined.
- Pour the batter into the prepared pan and smooth the top. Press fresh fig slices firmly into the batter in a circular pattern.
- Drizzle honey over the figs and sprinkle with cinnamon.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
