Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- ¾ cup (175ml) vegetable oil
- 2 large eggs
- 1 cup (240ml) whole milk
- 1 tsp (5ml) vanilla extract
- 3 cups (450g) peeled and sliced peaches
- 1 tbsp (15ml) lemon juice
- ¼ cup (50g) brown sugar, packed
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch pan with butter or line it with parchment paper.
- Toss sliced peaches with lemon juice in a small bowl and set aside.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until no clumps remain.
- Add the vegetable oil, eggs, milk, and vanilla extract to the dry ingredients.
- Beat on medium speed for about 60 seconds until the batter is smooth and glossy, being careful not to overmix.
- Pour the batter into the prepared pan and spread it evenly with a spatula.
- Arrange the peach slices in a single, even layer across the top of the batter.
- Mix the brown sugar and cinnamon, then sprinkle the mixture evenly over the peaches.
- Bake for 40–50 minutes until the edges pull away slightly from the pan and a toothpick inserted into the center comes out clean.
