Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp (12g) baking powder
  • ½ tsp (3g) salt
  • ¾ cup (175ml) vegetable oil
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1 tsp (5ml) vanilla extract
  • 3 cups (450g) peeled and sliced peaches
  • 1 tbsp (15ml) lemon juice
  • ¼ cup (50g) brown sugar, packed
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch pan with butter or line it with parchment paper.
  2. Toss sliced peaches with lemon juice in a small bowl and set aside.
  3. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until no clumps remain.
  4. Add the vegetable oil, eggs, milk, and vanilla extract to the dry ingredients.
  5. Beat on medium speed for about 60 seconds until the batter is smooth and glossy, being careful not to overmix.
  6. Pour the batter into the prepared pan and spread it evenly with a spatula.
  7. Arrange the peach slices in a single, even layer across the top of the batter.
  8. Mix the brown sugar and cinnamon, then sprinkle the mixture evenly over the peaches.
  9. Bake for 40–50 minutes until the edges pull away slightly from the pan and a toothpick inserted into the center comes out clean.
