Ingredients:
- 1 lb fresh figs, stems removed and diced
- 1 cup granulated sugar
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest, finely grated
- 1 tsp vanilla extract
- 1 pinch sea salt
Instructions:
- Combine the diced figs, sugar, and lemon zest in a heavy-bottomed saucepan. Stir gently and let sit for 2–3 minutes until sugar draws out moisture.
- Place the pan over medium heat until the mixture reaches a gentle boil, then reduce heat to low and simmer. Occasionally crush figs with a potato masher to achieve a chunky-yet-smooth texture.
- Stir in the lemon juice and salt. Continue to simmer for 10–15 minutes until the jam is glossy and reaches a 'sheet' consistency.
- Remove from heat and stir in the vanilla extract to preserve its aroma.
