Ingredients:

  • 1/2 cup (125g) creamy peanut butter
  • 1/3 cup (115ml) honey
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 2 cups (180g) old-fashioned rolled oats
  • 1/2 cup (65g) sunflower seeds
  • 1/4 cup (30g) flaxseeds
  • 1/3 cup (50g) dried cranberries
  • 1/3 cup (60g) semi-sweet chocolate chips

Instructions:

  1. Place the peanut butter and honey in a small microwave-safe bowl. Microwave for 20–30 seconds until the mixture is fluid. Stir in the vanilla extract and sea salt.
  2. In a large mixing bowl, combine the rolled oats, sunflower seeds, flaxseeds, and dried cranberries. Pour the liquid honey-nut butter mixture over the dry ingredients and stir with a spatula until the oats are glossy and fully saturated.
  3. Fold in the semi-sweet chocolate chips.
  4. Transfer the mixture into an 8x8 inch square baking pan lined with parchment paper. Press down firmly with a spatula or the bottom of a flat glass to pack the mixture tightly.
  5. Chill in the refrigerator for at least 60 minutes until the bars are firm to the touch, then slice into 12 bars.
