Ingredients:

  • 1/2 cup unsalted butter, softened (115g)
  • 1/3 cup brown sugar, packed (65g)
  • 2 tbsp granulated sugar (25g)
  • 1 large egg yolk (18g)
  • 1 tsp vanilla extract (5ml)
  • 1 1/4 cups all-purpose flour (155g)
  • 1/2 tsp baking soda (3g)
  • 1/4 tsp sea salt (1.5g)
  • 1/2 cup mini semi-sweet chocolate chips (85g)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, beat the softened butter, brown sugar, and granulated sugar until the mixture is pale and fluffy.
  3. Stir in the egg yolk and vanilla extract until fully emulsified and smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring with a spatula until just combined.
  6. Fold in the mini chocolate chips until evenly distributed, taking care not to overmix.
  7. Line a baking sheet with parchment paper. Using a 1 tsp measuring spoon, scoop the dough and roll into small, tight spheres.
  8. Place the dough spheres on the sheet about 1/2 inch (1.2cm) apart.
  9. Bake for 7 to 8 minutes until the edges turn a light golden brown while the centers remain soft.
