Ingredients:
- 1 cup (225g) unsalted butter, softened
- ½ cup (60g) powdered sugar
- 2 cups (250g) all-purpose flour
- ½ tsp (3g) salt
- 1 cup (115g) finely chopped pecans
- ¾ cup (90g) powdered sugar
Instructions:
- Cream the softened butter and ½ cup of powdered sugar until smooth but not fluffy.
- Stir in the flour and salt until a soft dough forms, then fold in the finely chopped pecans.
- Scoop 1 tablespoon of dough and roll it into a 1-inch ball. Place on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 10–12 minutes until the edges are barely set but not browned.
- While the cookies are still hot from the oven, roll them in approximately ⅓ cup of powdered sugar.
- Let the cookies cool completely on the pan.
- Once cold, roll the cookies a second time in the remaining powdered sugar for a thick finish.
