Ingredients:

  • 1 cup (150g) rolled oats
  • 1/2 cup (100g) pitted Medjool dates
  • 2 tbsp (32g) almond butter
  • 1 tbsp (6g) fresh mandarin orange zest
  • 2 tbsp (15g) unsweetened raw cacao powder
  • 1/2 tsp (2.5ml) pure vanilla extract
  • 1 pinch (1g) sea salt
  • 1 tbsp (15g) shredded coconut

Instructions:

  1. Place the pitted dates in the food processor and pulse until they form a thick, sticky paste.
  2. Add the almond butter and vanilla extract, pulsing again until the mixture is smooth and velvety.
  3. Add the rolled oats, raw cacao powder, sea salt, and fresh mandarin zest. Process in short bursts until the mixture forms a coarse dough that no longer clings to the sides of the bowl.
  4. Scoop approximately 1 tablespoon of dough and roll between your palms to form a sphere.
  5. Roll each ball in shredded coconut or extra cacao powder.
  6. Place the bites on a parchment-lined sheet and refrigerate for 30 minutes to allow the structure to set.
