Ingredients:

  • 1 lb ground chicken (93% lean)
  • 1/2 cup shredded parmesan cheese
  • 1 large egg, beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/4 tsp fine sea salt
  • 1/3 cup low carb marinara sauce
  • 1 cup shredded low moisture mozzarella cheese
  • 12 slices pepperoni
  • 5 fresh basil leaves

Instructions:

  1. Preheat oven to 400°F (200°C). Note: A hot oven is vital for immediate protein setting.
  2. Combine chicken, 1/2 cup parmesan, egg, garlic powder, oregano, and salt in a bowl.
  3. Mix thoroughly until the egg is completely incorporated and the mixture is tacky.
  4. Spread mixture onto a parchment lined baking sheet. Note: Aim for 5 mm thickness for best results.
  5. Bake crust for 15 minutes until the surface is opaque and edges are browning.
  6. Remove pan and spread 1/3 cup low carb marinara sauce over the hot crust.
  7. Sprinkle mozzarella evenly across the surface, reaching almost to the edges.
  8. Layer pepperoni slices on top of the cheese.
  9. Return to oven for 5 minutes until cheese is bubbly and pepperoni is sizzling.
  10. Garnish with basil after letting the pizza rest for 3 minutes.
