Ingredients:
- 1 lb ground chicken (93% lean)
- 1/2 cup shredded parmesan cheese
- 1 large egg, beaten
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp fine sea salt
- 1/3 cup low carb marinara sauce
- 1 cup shredded low moisture mozzarella cheese
- 12 slices pepperoni
- 5 fresh basil leaves
Instructions:
- Preheat oven to 400°F (200°C). Note: A hot oven is vital for immediate protein setting.
- Combine chicken, 1/2 cup parmesan, egg, garlic powder, oregano, and salt in a bowl.
- Mix thoroughly until the egg is completely incorporated and the mixture is tacky.
- Spread mixture onto a parchment lined baking sheet. Note: Aim for 5 mm thickness for best results.
- Bake crust for 15 minutes until the surface is opaque and edges are browning.
- Remove pan and spread 1/3 cup low carb marinara sauce over the hot crust.
- Sprinkle mozzarella evenly across the surface, reaching almost to the edges.
- Layer pepperoni slices on top of the cheese.
- Return to oven for 5 minutes until cheese is bubbly and pepperoni is sizzling.
- Garnish with basil after letting the pizza rest for 3 minutes.
