Ingredients:

  • 1 cup white candy melts or white chocolate
  • 1 tsp coconut oil
  • 21g unflavored gelatin
  • 0.5 cup fresh key lime juice
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 0.25 tsp fine sea salt
  • 0.5 cup water
  • 2 tsp clear vanilla extract
  • 0.5 tsp pink gel food coloring
  • 0.25 cup key lime zest
  • 12 vanilla waffle cones

Instructions:

  1. Melt the 1 cup white candy melts with 1 tsp coconut oil in a microwave safe bowl. Note: Use 30 second bursts to avoid burning.
  2. Coat the interior of the 12 vanilla waffle cones with the melted mixture until the entire inner surface is opaque.
  3. Bloom the 21g gelatin in the 0.5 cup key lime juice in your mixer bowl for 5 minutes.
  4. Boil the 2 cups sugar, 1 cup corn syrup, 0.5 cup water, and salt in a saucepan.
  5. Cook the syrup until the thermometer reads exactly 240°F.
  6. Whisk the gelatin on low while slowly pouring in the hot syrup. Note: Pour down the side of the bowl to avoid splashing.
  7. Increase to high speed and whip for 10 minutes until the bowl feels cool and peaks are stiff.
  8. Fold in the 2 tsp vanilla and 0.25 cup zest, then swirl in the 0.5 tsp pink gel food coloring.
  9. Pipe the mixture into the prepared cones immediately until it forms a tall, elegant peak.
  10. Let the cones set at room temperature for 2 hours until the surface is tacky but not wet.
