Ingredients:

  • 1 ½ cups (170g) Shredded Low-Moisture Mozzarella
  • ¾ cup (84g) Super-Fine Blanched Almond Flour
  • 1 Large Egg, room temperature
  • 1 tsp (5g) Garlic Powder or Garlic Salt
  • 2 tbsp (28g) Grated Parmesan

Instructions:

  1. Preheat your oven to 400°F (200°C). Combine shredded mozzarella and almond flour in a microwave-safe glass bowl.
  2. Microwave in 30-second intervals until the cheese is completely melted. Once melted, immediately stir in the room temperature egg and the garlic powder/salt. Mix the garlic powder with the flour initially for better distribution. (Pro Secret: Mix garlic powder with the flour first for even flavor distribution).
  3. Stir vigorously with a stiff spatula until the egg is fully incorporated and the dough is a uniform consistency.
  4. Place the dough onto a sheet of parchment paper, top with another sheet, and roll into a 1/4 inch thick rectangle.
  5. Remove the top sheet and use a pizza cutter to slice the dough into 1-inch strips, keeping them close together.
  6. Top with grated Parmesan. Slide the parchment paper onto a preheated baking sheet.
  7. Bake for 8–10 minutes until the edges are golden and the cheese is bubbly.
