Ingredients:

  • 1 cup (225g) cottage cheese
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/3 cup (65g) powdered monk fruit sweetener
  • 2 tbsp (30ml) heavy cream
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) fine sea salt
  • 1/2 cup (75g) fresh raspberries
  • 1 tbsp (15g) sugar-free chocolate shavings

Instructions:

  1. Combine the 1 cup (225g) cottage cheese, 1/4 cup (25g) cocoa powder, 1/3 cup (65g) powdered monk fruit, 2 tbsp (30ml) heavy cream, 1 tsp (5ml) vanilla, and 1/4 tsp (1.5g) salt in your blender.
  2. Process on high for 60-90 seconds until the mixture looks completely smooth and glossy.
  3. Stop the blender halfway through to scrape down the sides with a spatula. Note: This prevents pockets of unmixed cottage cheese.
  4. Pulse the blender on low for 10 seconds until the mixture lightens in color slightly.
  5. Pour the mixture evenly into four ramekins.
  6. Smooth the tops with the back of a spoon for a clean, professional look.
  7. Refrigerate the ramekins for 30 minutes. Note: This allows the fats to firm up, creating a stable mousse.
  8. Top with 1/2 cup (75g) fresh raspberries and 1 tbsp (15g) sugar-free chocolate shavings.
  9. Serve immediately while chilled.
