Ingredients:
- 8 oz fresh figs, halved lengthwise
- 1 tbsp raw honey
- 1/2 tsp ground cinnamon
- 1/4 tsp pure vanilla extract
- 1 cup plain non-fat Greek yogurt
- 1 tsp lemon juice
- 1 pinch sea salt
Instructions:
- Preheat your oven to 400°F (200°C) and line a small rimmed baking sheet with parchment paper.
- Slice the figs in half vertically and place them cut-side up on the prepared baking sheet.
- In a small bowl, whisk together the honey, cinnamon, and vanilla extract. Drizzle the mixture evenly over the figs.
- Roast for 10–12 minutes, or until the edges appear bubbly and caramelized.
- While the figs are roasting, whisk the lemon juice and sea salt into the Greek yogurt.
- Divide the yogurt into two bowls. Carefully place the warm roasted figs on top and drizzle any remaining syrup from the pan over the yogurt.
