Ingredients:

  • 8 oz fresh figs, halved lengthwise
  • 1 tbsp raw honey
  • 1/2 tsp ground cinnamon
  • 1/4 tsp pure vanilla extract
  • 1 cup plain non-fat Greek yogurt
  • 1 tsp lemon juice
  • 1 pinch sea salt

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a small rimmed baking sheet with parchment paper.
  2. Slice the figs in half vertically and place them cut-side up on the prepared baking sheet.
  3. In a small bowl, whisk together the honey, cinnamon, and vanilla extract. Drizzle the mixture evenly over the figs.
  4. Roast for 10–12 minutes, or until the edges appear bubbly and caramelized.
  5. While the figs are roasting, whisk the lemon juice and sea salt into the Greek yogurt.
  6. Divide the yogurt into two bowls. Carefully place the warm roasted figs on top and drizzle any remaining syrup from the pan over the yogurt.
