Ingredients:
- 1 cup (150g) fresh strawberries, quartered
- 1 cup (160g) fresh pineapple, bite-sized chunks
- 1 cup (150g) mango, diced
- 1 cup (170g) blueberries, whole
- 1 cup (160g) green grapes, halved
- 1 cup (150g) kiwi, peeled and sliced into half-moons
- 3 tbsp (45ml) honey
- 2 tbsp (30ml) fresh lime juice
- 1 tsp (5ml) lime zest
- 1 tbsp (15g) fresh mint, finely chiffonaded
Instructions:
- Wash and thoroughly dry all produce. Dice the pineapple, mango, and kiwi into uniform 1/2-inch pieces. Quarter the strawberries and halve the grapes. Place all prepared fruit into a large glass bowl, tossing gently to distribute colors.
- In a separate small bowl, whisk together the honey, fresh lime juice, and lime zest. Stir vigorously until the honey is completely incorporated into the juice and the mixture looks translucent and glossy.
- Drizzle the honey-lime glaze over the fruit. Use a rubber spatula to fold the fruit gently to avoid bruising the berries. Fold in the fresh mint.
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to marry and the honey-lime dressing to create a natural syrup.
