Ingredients:
- 1 sheet (200g) chilled puff pastry
- 1 large egg
- 8 oz (225g) softened cream cheese
- 2 tbsp (30g) honey
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1g) salt
- 6-8 fresh figs (280g), sliced into thirds
- 3 tbsp (42g) honey
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Roll out the chilled puff pastry and press it into a 9-inch tart pan. Trim the excess edges and apply beaten egg wash along the outer 1-inch border using a pastry brush.
- In a medium bowl, beat the softened cream cheese, 2 tablespoons of honey, vanilla, and salt until the texture is velvety and smooth. Spread the mixture evenly across the bottom of the pastry, leaving the egg-washed border clear.
- Toss the sliced figs in a bowl with the lemon juice and 2 tablespoons of the remaining honey. Arrange the figs atop the cheese layer in a concentric circle, pressing them slightly into the curd. Drizzle the final tablespoon of honey over the fruit.
- Slide the tart onto a baking sheet and bake at 375°F (190°C) for 20-25 minutes until the pastry is mahogany-colored and figs have softened. Let the tart rest for 10 minutes before slicing.
