Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 2 large eggs
  • 1/4 cup Greek yogurt
  • 1 tsp vanilla extract
  • 6-8 medium fresh figs, sliced
  • 2 tbsp honey (for drizzling)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
  3. In a separate larger bowl, cream the softened butter and 1/2 cup honey until smooth.
  4. Beat in the eggs one at a time, then stir in the Greek yogurt and vanilla extract until the batter is a consistent gold color.
  5. Gently fold the dry ingredients into the wet mixture using a spatula, stopping as soon as no streaks of flour remain.
  6. Pour the batter into the prepared pan and smooth the top. Arrange the fresh fig slices on top, pressing them gently into the batter.
  7. Bake for 35 minutes. Once removed from the oven, drizzle with the remaining 2 tablespoons of honey while warm.
