Ingredients:
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 2 large eggs
- 1/4 cup Greek yogurt
- 1 tsp vanilla extract
- 6-8 medium fresh figs, sliced
- 2 tbsp honey (for drizzling)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- In a separate larger bowl, cream the softened butter and 1/2 cup honey until smooth.
- Beat in the eggs one at a time, then stir in the Greek yogurt and vanilla extract until the batter is a consistent gold color.
- Gently fold the dry ingredients into the wet mixture using a spatula, stopping as soon as no streaks of flour remain.
- Pour the batter into the prepared pan and smooth the top. Arrange the fresh fig slices on top, pressing them gently into the batter.
- Bake for 35 minutes. Once removed from the oven, drizzle with the remaining 2 tablespoons of honey while warm.
