Ingredients:
- 6 oz lean ground beef (90/10)
- 3 cloves garlic, minced
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1/4 tsp smoked paprika
- 1 cup low-fat cottage cheese
- 1 tbsp fresh chives, finely chopped
Instructions:
- Mince your garlic finely.
- Place your skillet over medium high heat until a drop of water flicked on it dances and evaporates.
- Add the 6 oz of ground beef. Break it up with a wooden spoon until no large pink clumps remain.
- Sprinkle the sea salt, black pepper, and smoked paprika over the meat. Stir to coat every morsel.
- Toss in the 3 minced cloves. Cook for 1 minute until the scent is fragrant and toasted.
- Tilt the pan and spoon out any excess grease.
- Remove from heat.
- Stir in the 1 cup of cottage cheese. The white curds should start to turn a light orange from the paprika.
- Top with the fresh chives until the bowl looks vibrant and green.
