Ingredients:

  • 6 oz lean ground beef (90/10)
  • 3 cloves garlic, minced
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1 cup low-fat cottage cheese
  • 1 tbsp fresh chives, finely chopped

Instructions:

  1. Mince your garlic finely.
  2. Place your skillet over medium high heat until a drop of water flicked on it dances and evaporates.
  3. Add the 6 oz of ground beef. Break it up with a wooden spoon until no large pink clumps remain.
  4. Sprinkle the sea salt, black pepper, and smoked paprika over the meat. Stir to coat every morsel.
  5. Toss in the 3 minced cloves. Cook for 1 minute until the scent is fragrant and toasted.
  6. Tilt the pan and spoon out any excess grease.
  7. Remove from heat.
  8. Stir in the 1 cup of cottage cheese. The white curds should start to turn a light orange from the paprika.
  9. Top with the fresh chives until the bowl looks vibrant and green.
