Ingredients:

  • 1 lb ground chicken breast
  • 1/2 cup steamed broccoli, finely minced
  • 1/4 cup steamed carrots, finely minced
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1 large egg, beaten
  • 1/2 cup fine breadcrumbs
  • 2 tbsp olive oil

Instructions:

  1. Steam the broccoli and carrots until very soft, then mince them into a paste using a food processor or sharp knife.
  2. In a large bowl, combine the ground chicken, minced vegetables, garlic powder, onion powder, and salt. Mix until the vegetables are evenly distributed.
  3. Using a cookie scoop or tablespoon, portion the mixture into small, bite-sized rounds and flatten them slightly into discs.
  4. Dip each nugget into the beaten egg, then roll it in the fine breadcrumbs, pressing lightly to ensure the coating adheres.
  5. For Air Fryer: Arrange in a single layer, spray with olive oil, and cook at 375°F (190°C) for 8-10 minutes, flipping halfway. For Oven: Preheat to 400°F (200°C) and bake on a parchment-lined sheet for 12-15 minutes.
