Ingredients:
- 1 lb ground chicken breast
- 1/2 cup steamed broccoli, finely minced
- 1/4 cup steamed carrots, finely minced
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1 large egg, beaten
- 1/2 cup fine breadcrumbs
- 2 tbsp olive oil
Instructions:
- Steam the broccoli and carrots until very soft, then mince them into a paste using a food processor or sharp knife.
- In a large bowl, combine the ground chicken, minced vegetables, garlic powder, onion powder, and salt. Mix until the vegetables are evenly distributed.
- Using a cookie scoop or tablespoon, portion the mixture into small, bite-sized rounds and flatten them slightly into discs.
- Dip each nugget into the beaten egg, then roll it in the fine breadcrumbs, pressing lightly to ensure the coating adheres.
- For Air Fryer: Arrange in a single layer, spray with olive oil, and cook at 375°F (190°C) for 8-10 minutes, flipping halfway. For Oven: Preheat to 400°F (200°C) and bake on a parchment-lined sheet for 12-15 minutes.
