Ingredients:
- 2 cups rolled oats
- 1/2 cup unsweetened applesauce
- 1/3 cup maple syrup
- 2 tbsp melted coconut oil
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup chopped walnuts
- 1/4 cup dried cranberries
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large mixing bowl, stir together the applesauce, maple syrup, melted coconut oil, and vanilla extract until the mixture is a smooth emulsion.
- Add the rolled oats, cinnamon, baking soda, and salt to the bowl. Stir until every oat is thoroughly coated, then fold in the chopped walnuts and dried cranberries.
- Press the mixture firmly into the prepared baking pan using the back of a spatula.
- Bake for 20 minutes or until the edges are golden brown and the center feels set. Let the bars cool completely in the pan before slicing into 12 rectangles.
