Ingredients:

  • 2 cups rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, stir together the applesauce, maple syrup, melted coconut oil, and vanilla extract until the mixture is a smooth emulsion.
  3. Add the rolled oats, cinnamon, baking soda, and salt to the bowl. Stir until every oat is thoroughly coated, then fold in the chopped walnuts and dried cranberries.
  4. Press the mixture firmly into the prepared baking pan using the back of a spatula.
  5. Bake for 20 minutes or until the edges are golden brown and the center feels set. Let the bars cool completely in the pan before slicing into 12 rectangles.
