Ingredients:

  • 2 Hibiscus tea bags
  • 0.5 cup boiling water
  • 1 inch fresh ginger root, peeled and sliced
  • 1 tsp raw honey
  • 6 oz chilled sparkling mineral water
  • 0.5 fresh lime, juiced
  • 5 fresh mint leaves
  • 1 cup ice cubes

Instructions:

  1. Place the hibiscus tea bags and sliced ginger in a heat-proof container. Pour over 1/2 cup of boiling water and steep for 5 minutes. Stir in the raw honey while the liquid is hot until fully dissolved.
  2. Place the mint leaves and lime juice in a tall glass. Lightly muddle the leaves to release aromatic oils. Strain the hibiscus-ginger concentrate into the glass and fill to the brim with large ice cubes.
  3. Slowly pour the chilled sparkling mineral water over the back of a spoon into the glass to maintain carbonation. Stir gently from the bottom once and garnish with a mint sprig and lime wheel.
