Ingredients:
- 1 medium avocado, pitted and peeled
- 1/4 cup unsweetened almond milk
- 2 tbsp pure maple syrup
- 1/3 cup unsweetened dark cocoa powder
- 1 tsp pure vanilla extract
- 1/4 tsp fine sea salt
Instructions:
- Add the avocado, almond milk, and maple syrup into a high-speed blender or food processor. Pulse 3-4 times to break down the fruit.
- Add the cocoa powder, vanilla extract, and salt. Blend on high for 60-90 seconds, scraping down the sides with a spatula halfway through, until the mixture is deep, glossy mahogany.
- Stop the blender once the mixture is completely smooth and velvety. If the pudding is too thick, add almond milk 1 tbsp at a time until a soft-peak consistency is reached.
- Divide into two glass ramekins and optionally chill in the refrigerator for 30 minutes for maximum thickness.
