Ingredients:

  • 1 medium avocado, pitted and peeled
  • 1/4 cup unsweetened almond milk
  • 2 tbsp pure maple syrup
  • 1/3 cup unsweetened dark cocoa powder
  • 1 tsp pure vanilla extract
  • 1/4 tsp fine sea salt

Instructions:

  1. Add the avocado, almond milk, and maple syrup into a high-speed blender or food processor. Pulse 3-4 times to break down the fruit.
  2. Add the cocoa powder, vanilla extract, and salt. Blend on high for 60-90 seconds, scraping down the sides with a spatula halfway through, until the mixture is deep, glossy mahogany.
  3. Stop the blender once the mixture is completely smooth and velvety. If the pudding is too thick, add almond milk 1 tbsp at a time until a soft-peak consistency is reached.
  4. Divide into two glass ramekins and optionally chill in the refrigerator for 30 minutes for maximum thickness.
