Ingredients:

  • 8 oz soft goat cheese, room temperature
  • 4 oz full-fat cream cheese, softened
  • 2 tbsp heavy cream
  • 2 cloves garlic, finely minced
  • 1 tbsp fresh lemon juice
  • 1/4 cup fresh flat-leaf parsley, finely chopped
  • 2 tbsp fresh chives, minced
  • 1 tbsp fresh dill, finely chopped
  • 1/2 tsp flaky sea salt
  • 1/4 tsp cracked black pepper
  • 1 French baguette, sliced into 1/2 inch rounds
  • 2 tbsp extra virgin olive oil

Instructions:

  1. Combine the minced garlic and lemon juice in a small bowl. Let it sit for at least 5 minutes to macerate and neutralize the harsh alicin enzymes.
  2. In a large bowl, combine the softened goat cheese, cream cheese, and heavy cream. Use a hand mixer on medium-high speed for 2–3 minutes until the mixture is light, aerated, and completely smooth.
  3. Stop the mixer and add the macerated garlic (including the juice), parsley, chives, dill, salt, and pepper. Use a rubber spatula to gently fold the herbs into the cheese base.
  4. Brush the baguette slices with olive oil and broil for 2-3 minutes until golden and crisp. Serve the whipped cheese spread immediately alongside the warm crostini.
