Ingredients:
- 8 oz soft goat cheese, room temperature
- 4 oz full-fat cream cheese, softened
- 2 tbsp heavy cream
- 2 cloves garlic, finely minced
- 1 tbsp fresh lemon juice
- 1/4 cup fresh flat-leaf parsley, finely chopped
- 2 tbsp fresh chives, minced
- 1 tbsp fresh dill, finely chopped
- 1/2 tsp flaky sea salt
- 1/4 tsp cracked black pepper
- 1 French baguette, sliced into 1/2 inch rounds
- 2 tbsp extra virgin olive oil
Instructions:
- Combine the minced garlic and lemon juice in a small bowl. Let it sit for at least 5 minutes to macerate and neutralize the harsh alicin enzymes.
- In a large bowl, combine the softened goat cheese, cream cheese, and heavy cream. Use a hand mixer on medium-high speed for 2–3 minutes until the mixture is light, aerated, and completely smooth.
- Stop the mixer and add the macerated garlic (including the juice), parsley, chives, dill, salt, and pepper. Use a rubber spatula to gently fold the herbs into the cheese base.
- Brush the baguette slices with olive oil and broil for 2-3 minutes until golden and crisp. Serve the whipped cheese spread immediately alongside the warm crostini.
